I mentioned in my last post that I was taking on a Whole30 starting in March. I figured if I said it out loud and in print I would have no excuses not to start 🙂 Josh and I both started on March 20th. I don’t actually have that much to report. So far it’s been pretty easy for me. Josh had a pretty good headache the first week but he’s starting to feel better now. The hardest part has been when we are doing production where I would usually pop a couple of broken cookies in my mouth throughout the day “for quality assurance.” That auto pilot is a little hard to turn off. I thought no coffee would be rough but it actually wasn’t that bad, and I’ve found that cold brew coffee with Nutpods creamer is actually drinkable without any sweetener so I’ve had one of those on a couple of afternoons.
The most important part I think is to make flavorful foods. Even the kids ate everything I made last week without complaint. I should have taken some pictures of our food but I haven’t gotten into the habit of that yet.

You should try this sauce! Scroll down the page once you click on the link to get the sauce recipe. It was super tasty and really livened up my egg and veggie frittata. Speaking of frittatas, making a huge one of those on Sundays has been saving my mornings. I roast a big tray of vegetables for about 30 minutes at 400 degrees – shredded cabbage, sweet potatoes, broccoli, carrots, halved brussels sprouts, etc. Pretty much just whatever needs to be used up in the fridge. I save some for other meals and toss some in a big cast iron frying pan along with whatever leftover meat I have and pour in some beaten eggs and then bake at 400 for about 20 minutes. I make enough to last me all week and top it with the Awesome Sauce and some avocado.
We also had this pork loin recipe, and oh man it was good. I considered not doing the peppers because I don’t love them cooked, but I am glad I didn’t. They were so tasty! I didn’t have any herbs de provence so I just used a greek seasoning mix that I had in the cupboard. The girls thought the balsamic reduction tasted “funny” and it would have been still delicious without it if you don’t feel like messing with it.
Anyway, we are almost done with day 9 and just wanted to check in. This week is my dad’s birthday and then Easter the next weekend so I’ll have a couple more challenges to report Whole30 style.
