It’s Fall here in the Pacific Northwest – a beautiful mix of clear, crisp days mixed in with some rain and gorgeous Fall colors. We’re making a lot of our Jack’s Paleo Kitchen Ginger Molasses Cookies this time of year!
Settling in to Fall…
We’re all adjusted to the school and after school activity routine, and we are working on getting used to waking up in the dark. I usually hate when the days get shorter, but this year we are enjoying winding down and getting to bed early for some much-needed rest when the sun goes down earlier. Also – football is back! I personally have a very hard time resting, but I love me some Seahawks so I get 3 hours of mandatory rest every Sunday 😊 Last weekend there wasn’t a Seahawks game on and what should have been a resting day turned into demolishing our fireplace.
It’s going to be great when it’s done and our living room will feel much larger, but whew it was a lot more work than we thought even with the whole JACK family pitching in! The C in our JACK wanted to make sure she was extra safe 😉
We have a great selection of outdoor activities to do in our area – Pumpkin patches (pumpkin everything really!), U-pick apples, apple cider, and corn mazes galore. It’s my favorite time of the year!

People frequently ask what my favorite Jack’s Paleo Cookie flavor is, and honestly it’s very tough to choose. I’m our recipe developer and I refuse to put any product on the market that I don’t love. But –This time of year if I must choose my favorite cookie it would be our Jack’s Paleo Kitchen Ginger Molasses Cookies. They are soft, chewy, and have a little bite from the cinnamon and ginger. Also, they are AIP (Autoimmune Protocol) friendly!
These paleo friendly cookies are perfect to go with a cup of tea or coffee on a rainy day or lazy Sunday morning. They would also make a great addition to your Sunday football spread – Go Hawks!
