Hi Sheri! Thanks for the comment. Sorry for the late response, I guess I don’t have my settings working to notify me when there are comments. I’m glad you liked the cookies, Lemon is one of my favorites! All of them are good, but if you like Ginger Molasses they are definitely a crowd favorite. We have 5 flavors, but PCC has only brought in 3 for now. If you like them spread the word, if they sell well they will bring in the other 2 varieties! They freeze very nicely. We actually store them frozen, but they do re-freeze and still defrost well. They actually have a really long shelf life though as well. All of the ingredients that go in to the cookies are shelf-stable, so the resulting product will last quite awhile. We’ve tried them at home as long as 90 days and they were still good.
So far I have loved every product I have tried, but the double chocolate cookies are simply the best! But I would like to ask how long after opening do they stay good for? I merely ask because I just came back from a long vacation, and when I came back my sister offered me some cookies and I hadn’t realized until she had said something that they had been opened two weeks prior. They still tasted just as good as ever, and were just as soft as any other fresher batch! And it made me wonder just how long do these miraculous little things keep.
Hi Eleanor – I’m so sorry I missed this question! We get a ton of spam comments so sometimes I miss the real ones. I realize this was a very long time ago, but if you are still wondering they are good for at least 45 days at room temperature, 90 days refrigerated, or 1 year frozen. They don’t ever get unsafe to eat because everything in them is shelf stable, but they do dry out eventually.

I just gobbled up the lemon zing cookies I purchased at PCC. Delicious! I am anxious to try your other flavors. Do they freeze well?
